Bread baking consists of four Energy consuming Operations namely Mixing, Kneading, Moulding and Baking. Each of these Operations requires Thermal Energy, Manual Energy and Energy consumed in kneading Operation as a result of Diesel Fuel used (ECKD) or their combination. The Energy computation Equations were employed to determine the Energy consumed in each of these unit operations.Finally the Work recommends other forms of energy which are less Energy sapping and involves little or no side effect to the environment.
